8 Years in Florida and I Still Haven’t Seen the Mermaids

When I first moved to Florida almost eight years ago, I had grand visions of what my life would look like. I pictured weekend road trips to hidden clear-water springs, quirky roadside attractions, coastal kayak tours, and endless sunshine-filled adventures. Fast forward nearly a decade, and if I’m being honest?   Sunsets and Seafood: A Night at Salt Water Cowboys in St. Augustine If you are looking for the ultimate hidden gem that captures the old-school, rustic spirit of Northeast Florida, look no further than Salt Water Cowboys . Tucked away along the salt marshes of the Anastasia Island backwater, this iconic St. Augustine staple offers a dining experience centered around incredible coastal views and classic Southern comfort. The Atmosphere Perched directly over the marsh on stilts, the restaurant feels like a step back in time. With its weathered wood, open decks, and a canopy of ancient live oaks framing the water, it is the perfect spot to unwind. A View You Can't Forget The real magic happens right as the sun goes down. Watching the vibrant orange and pink sunset bleed across the expansive marsh grass while the tidal creeks reflect the fading light is worth the trip alone. Grab a seat on the deck, feel the coastal breeze, and watch the local wildlife wake up as the day ends. On the...
